Gastronomy in Acapulco deserves a very special place, since the experience covers a very wide range of flavors, ingredients and cooking styles and is one of the most outstanding tourist attractions in the city. It ranges from the traditional and typical cuisine of the markets where you delight in the incomparable coastal flavor, to the gourmet restaurants that satisfy the most demanding palates with top-level dishes. If we talk about tradition in Acapulco, we must mention the exquisite bolillo stuffed with pork, chilate and pozole, typical dishes that are more than a food, they are a cultural experience.
It is commonly prepared with mayonnaise, a special marinade and other spices that give it a characteristic flavor of the coast of Guerrero.

This recipe usually uses red snapper or sea bass, since the flavor of these fish combines very well with all the ingredients and provides an exquisite taste.
Everything is served with handmade corn tortillas and spicy sauce, not forgetting a side salad, tostadas, avocado and lemons.
